Baked Potato Soup

Baked Potato SoupThis is a simple and delicious soup, great for a cold winter day.


  • Bake 4 good-sized potatoes
  • Cool and peel
  • Put about 2 through a potato ricer
  • Optional: add salt, white pepper, garlic salt to taste
  • Dice the remaining potatoes

  • In saucepan, melt 2 Tbs butter
  • Add 2 Tbs. flour, and let it mix and thicken (don't let it brown)

  • Add 1 cup of cream (pour the cream in all at once)
  • Let it cook until thick

  • Add 1 can of chicken stock, the potato mixture, the diced potatoes, the
  • butter and the sour cream. Use milk or more cream if it is too thick.
  • Add broccoli, carrots or other vegetables as desired.

  • Optional: add roasted cloves of garlic to taste
