Tomato Free Chicken Pizza

Tomato Free Chicken Pizza
  • The first step is to prepare the Red Pepper Sauce:

  • Red Pepper Sauce

  • Ingredients

  • 6 Large red bell peppers
  • 3 tbsp Olive Oil
  • 5 cloves Garlic, minced
  • 2 tsp Basil
  • 1 tsp Oregano
  • 1 1/2 tsp Salt

  • Instructions

  • Slice red peppers into quarters (or smaller) and put them in a steamer. Steam until soft (about 20 minutes).
  • Put Olive oil in small pan and put over medium heat. Add garlic and cook until translucent (about 1-2 minutes).
  • Put steamed red peppers, basil, oregano and salt into food processor and turn on. While blending, drizzle in olive oil/garlic mixture until completely mixed. Turn off food processor.
  • Transfer to sauce pan and cook for approximately 15 minutes to blend flavors and evaporate some of the water so it will thicken.

  • This sauce is more orange in color and more sweet in flavor than tomato sauce, but when mixed with ground beef for spaghetti sauce or used on a pizza it is hard to tell that it's not made from tomatoes.



  • IC-friendly Chicken Pizza

  • Ingredients

  • 2 cups Red-pepper sauce (see above)
  • 1 lb Skinless, boneless chicken breasts
  • 1 pkg Baby salad spinach
  • 2 tbsp Powdered garlic (make sure it's just garlic, not garlic salt)
  • Optional: 1/2 cup Black olives (make sure packed in only water and ferrous sulfate - no vinegar or brine) 1/2 lb Mozzarella, shredded. 1/4 lb Meunster, shredded. Be certain to first cut off the red outer skin

  • Pizza Dough

  • Instructions

  • Pizza Dough: You can sometimes find premade pizza crusts that are IC-safe. But if not, use your bread machine on the "dough" setting to make a simple dough for pizza. Use a flour, yeast, and water recipe from a bread-dough cookbook, then add 2 tbsp olive oil to make it more like a pizza dough.

  • Sprinkle powdered garlic over chicken breasts and bake for around 30 minutes or until obviously done. When finished, shred with 2 forks and reserve to bowl.
  • Spread flour on countertop and put pizza dough on it. Spread with rolling pin into circle. Go ahead and toss it in the air on your fingertips like you see on TV - it works! When it reaches desired thickness and diameter, put on baking sheet.
  • First, spread red-pepper sauce pretty thickly over crust. Then add spinach, olives, and shredded chicken. Finally, top with shredded mozzarella and meunster to taste.
  • Bake pizza at 350 degrees until cheese is golden brown on top.
